
Taco Casserole

Ingredients:
- 1 lb lean ground beef
- 1 onion chopped
- 1 bell pepper chopped
- 1 15oz kernal corn drained
- 1 15oz diced tomatoes drained
- 1 cup shredded cheese
- 5 corn tortillas torn into bite sized pices
- 2 tbsp taco seasoning
- 1/2 tsp chili powder
- 1/2 tsp white pepper
- 1/2 tsp black pepper
- 1 tsp parsley
Instructions:
- Preheat the oven to 350 degrees Fahrenheit.
- In a large skillet over medium high heat saute the onion, bell pepper, seasonings, and ground beef until the beef is no longer pink.
- Drain any remaining grease.
- Transfer the beef mixture to a medium sized bowl.
- Add drained corn and tomatoes to the beef mixture and stir until combined.
- In the bottom of a prepared baking dish start making layers with the tortilla pieces, beef mixture, and top with a layer of cheese. Repeat the layers until the casserole dish is filled and add a layer of cheese on top.
- Bake in the oven for 20 minutes.
