Knock-Your-Socks-Off Guacamole

Ingredients:

  • 2 avocados
  • 1/2 white onion (sweet)
  • 1/3 c cilantro, finely chopped
  • 1 Habanero pepper, finely chopped
  • 2 Tbsp olive oil
  • Juice of 1 lime
  • Salt & freshly ground black pepper

Instructions:

  1. Cut the avocado in half lengthwise. Using a chef's knife, give the pit a slight whack, gently turn, and remove.
  2. Scoop avocado out with a spoon and put it in a bowl and mash with a fork.
  3. Add finely chopped white onion (sweet), finely chopped cilantro, a habanero or two (or whatever your favorite hot pepper is), lime juice, and olive oil.
  4. Add salt and pepper.
  5. Mix everything together with the mashed avocados.  Enjoy!
