Ingredients:

  • 4 pork chops
  • 1/4 cup celery, finely diced
  • 2 cups dry bread crumbs
  • 1 onion, chopped
  • 1/2 teaspoon pepper
  • 1/8 teaspoon poultry seasoning
  • 1/2 sage
  • 1/2 teaspoon salt
  • Salt and pepper
  • 1/2 cup water

Instructions:

  1. Slit a pocket along the bone side of each chop. Prepare the stuffing by browning the onion and celery in a little fat, then combining with crumbs, salt and pepper, sage and poultry seasoning and water. Stuff each chop with 1/4 of the mixture. Skewer edges together with toothpicks; season chops with salt and pepper.
  2. Place in baking pan. Cover and bake in a moderate 350 degree oven for one hour.
  3. Remove cover and continue 2
