Ingredients:
- 4 pork chops
- 1/4 cup celery, finely diced
- 2 cups dry bread crumbs
- 1 onion, chopped
- 1/2 teaspoon pepper
- 1/8 teaspoon poultry seasoning
- 1/2 sage
- 1/2 teaspoon salt
- Salt and pepper
- 1/2 cup water
Instructions:
- Slit a pocket along the bone side of each chop. Prepare the stuffing by browning the onion and celery in a little fat, then combining with crumbs, salt and pepper, sage and poultry seasoning and water. Stuff each chop with 1/4 of the mixture. Skewer edges together with toothpicks; season chops with salt and pepper.
- Place in baking pan. Cover and bake in a moderate 350 degree oven for one hour.
