Binagongang Baboy

Binagongang Baboy is a gluten free and dairy free main course.

Ingredients:

  • 1 pinch of black pepper
  • 1 tablespoon brown sugar
  • 1 head garlic, minced
  • 1 piece jalapeño pepper, cut into rings and seeds removed
  • 2 tablespoons olive oil for sautéing
  • 1 medium size onion, minced
  • 2 pounds pork, any cut though liempo is most commonly used (I use country styl
  • 2 tablespoons sauteed bagoong alamang (I used Barrio Fiesta's bottled Sauteed Shrimp Paste whi
  • 10 pieces string beans, cut into 2 ½ inch length
  • 1/4 cup water
  • 3 bundles small pechay

Instructions:

  1. Heat olive oil in a pan over medium heat.
  2. Saute garlic until golden brown.
  3. Add onion.
  4. Saute until it is transluscent.
  5. Add pork and stir-fry until juice comes out.
  6. Add bagoong and water. Keep stirring until everything is well mixed. Cover and simmer over medium-low heat until pork is cooked and tender.
  7. Add string beans. Simmer until half cooked.
  8. Add sugar, black pepper, pechay & jalapeo pepper.
  9. Mix well. Simmer for about 2 mins or until vegetables are cooked but still crunchy.
  10. Serve hot with rice.
