Ingredients:

  • 1 tablespoon apple cider vinegar
  • 1 cup fine-grind bulgur
  • 1 can black beans
  • 1 can (8 oz) pineapple
  • 1 teaspoon lime juice
  • 1 cup red bell pepper, chopped
  • 2 scallions, chopped

Instructions:

  1. Add 1 cup cold water to the bulgur; let sit for 30 minutes or until water is fully absorbed.
  2. Drain the beans and pineapple and mix with pepper, scallions, vinegar, lime juice and bulgur.
