Chunky Tomato Gazpacho

Ingredients:

  • Sliced avocado
  • 1 cup bread crumbs
  • 4 stalks of diced celery
  • 1 cucumber
  • 2 cloves minced garlic
  • 1 green pepper, chopped
  • 1 tablespoon olive oil
  • your favorite olives, chopped
  • 1/2 onion
  • salt and pepper to taste
  • 3 tablespoons (30 -45ml) sherry wine vinegar
  • 1 cup (240 ml) tomato sauce
  • 8 ripe tomatoes (peeled, seeded and coarsely chopped)

Instructions:

  1. Put the tomatoes, green pepper and onion in a blender and puree. (BTW, you can easily peel tomatoes by submerging them in boiling water for a minute or two after which the skins should come off easily.)
  2. Add the rest of the ingredients to the tomato mixture and garnish with your favorite chopped olives.
