Ingredients:

  • 8 corn tortillas
  • ¾ cup fat-free milk
  • 1 tbsp all-purpose flour
  • ½ cup smoked gouda cheese, shredded
  • ½ cup sliced green onions
  • ½ lb ground turkey
  • ¼ tsp ground turmeric
  • 1 tsp kosher salt
  • ¼ tsp paprika
  • ½ cup pickled jalapeños
  • ½ cup shredded cheddar cheese
  • 2 tbsp taco seasoning
  • 1 cup diced tomatoes
  • 1 tbsp unsalted butter
  • 1 tsp vegetable oil
  • ¼ cup water

Instructions:

  1. Preheat oven to 35
  2. Stack tortillas and cut into fourths.
  3. Place on a baking sheet in a single layer. Lightly spray with cooking spray.
  4. Sprinkle with salt
  5. Bake 10-15 minutes or until chips are crisp.In a large skillet heat oil over medium heat.
  6. Add ground turkey and cook until browned.
  7. Sprinkle taco seasoning over meat and add water. Stir and let simmer until water is absorbed.In a medium saucepan melt butter over medium heat.Stir in flour to melted butter; cook for 1 minute.Slowly whisk in milk so there are no lumps.
  8. Add cheeses, turmeric, and paprika.Cook on medium-low heat until cheese is melted and sauce has thickened.Arrange chips on a plate.
  9. Drizzle the hot cheese over the chips.Top with the meat, green onions, and jalapeos.
