
Instant Pot Black Bean Nachos
You can never have too many Mexican recipes, so give Instant Pot Black Bean Nachos a try.

Ingredients:
- Black beans from the instant pot
- 1 chopped jalapeño
- 1 tomato chopped
- 1/3 cup onion
- 2 cloves garlic
- 1 tbsp cilantro chopped
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup cheddar cheese
- 1/2 lime
- Chips
Instructions:
- Chop veggies and place all ingredients into the bowl with black beans.
- Stir well squeezing the lime over the salsa.
- Place in the fridge and allow to sit for a 1/2 hour.
- Arrange chips on the baking sheet placing 3/4 of the cheese over chips.
- Place under broiler until chips are golden and cheese is bubbly.
- Place salsa over chips and garnish with remaking cheese.
- Squeeze lime over nachos prior to serving.
