Ingredients:

  • 1 lb lean ground beef
  • 1 onion chopped
  • 1 bell pepper chopped
  • 1 15oz kernal corn drained
  • 1 15oz diced tomatoes drained
  • 1 cup shredded cheese
  • 5 corn tortillas torn into bite sized pices
  • 2 tbsp taco seasoning
  • 1/2 tsp chili powder
  • 1/2 tsp white pepper
  • 1/2 tsp black pepper
  • 1 tsp parsley

Instructions:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a large skillet over medium high heat saute the onion, bell pepper, seasonings, and ground beef until the beef is no longer pink.
  3. Drain any remaining grease.
  4. Transfer the beef mixture to a medium sized bowl.
  5. Add drained corn and tomatoes to the beef mixture and stir until combined.
  6. In the bottom of a prepared baking dish start making layers with the tortilla pieces, beef mixture, and top with a layer of cheese. Repeat the layers until the casserole dish is filled and add a layer of cheese on top.
  7. Bake in the oven for 20 minutes.
