African Bean Soup

Ingredients:

  • 2 cups dried black-eyed peas
  • 2 cups sliced carrots
  • 1 cup green pepper, diced
  • 1/2 cup chopped onion
  • 2 tablespoons peanut butter
  • 3/4 teaspoon salt
  • 150 ml water

Instructions:

  1. Saute onions in large pot until soft.
  2. Add all ingredients except for peanut butter and simmer for 1 1/2 hours. Stir a spoonful of peanut butter into each serving.
