
Black Bean Salad
You can never have too many side dish recipes, so give Black Bean Salad a try.

Ingredients:
- 1 tablespoon apple cider vinegar
- 1 cup fine-grind bulgur
- 1 can black beans
- 1 can (8 oz) pineapple
- 1 teaspoon lime juice
- 1 cup red bell pepper, chopped
- 2 scallions, chopped
Instructions:
- Add 1 cup cold water to the bulgur; let sit for 30 minutes or until water is fully absorbed.
- Drain the beans and pineapple and mix with pepper, scallions, vinegar, lime juice and bulgur.
