
Black Bean Salad {my Way}

Ingredients:
- 1 medium avocado, peeled, seeded and cut into chunks
 - 3 cans black beans
 - cup chopped fresh cilantro
 - 1 1/2 cups corn
 - 1/4 cup extra virgin olive oil
 - 1/2 pickled jalapeño pepper, minced
 - 1 tablespoon fresh lime juice
 - 1/2 cup white or red onion (I used white onion)
 - 4 fresh Roma tomatoes, chopped
 - Salt and pepper to taste
 
Instructions:
- In a large bowl, combine all the ingredients.
 - Add salt and pepper to taste. Chill a bit before serving.
