
Braised Carrots
You can never have too many side dish recipes, so give Braised Carrots a try.

Ingredients:
- 1/2 cup apple, juice
- 3 carrot, chopped, (rolling cut is nice)
- 1 fresh sprig rosemary, chopped or 1/2 tsp dried rosemary<
- 2 clv garlic, bruised
- 1 zest of 1 lemon
- 2 tablespoons olive oil
- 1 onion, chopped
Instructions:
- Heat the oil in a frypan over high heat.
- Add the garlic and onion and cook for 2 minutes.
- Add the carrots, rosemary and lemon zest and cook for 2 minutes more.
- Add the apple juice and cook for 3 more minutes, until almost all of the liquid has evaporated.
