Griet's vegetable soup

Griet's vegetable soup is a hor d'oeuvre that serves 6.

Ingredients:

  • 1 small sized head red cabbage
  • 1 small onion
  • 1 stick leeks
  • 1 carrot
  • 1 small turnip root
  • 3 small potatoes
  • salt
  • black pepper
  • 3 tablespoons spoons olive or vegetable oil
  • 500 milliliters water

Instructions:

  1. Chop the vegetables.
  2. In a large saucepan, cook the onion and leeks in olive oil, over moderate heat. When the onions are softened, add the rest of the vegetables and stir well, so that they are coated with oil.
  3. Cover the pan and cook for about 5 minute.
  4. Add the water and the spices, and cook for 20 minutes, stirring occasionally. Your Griets soup is ready!
