Ingredients:
- 3 Cherry tomatoes, diced
- Green pepper, diced
- 1 tablespoon Honey
- 3 teaspoons olive oil
- 3 tablespoons Black pepper peanuts
- 3 tablespoons Red wine vinegar
- salt and pepper
- 3 Sundried tomatoes, diced
- Yellow pepper, diced
- 2 cups Zucchini, unskinned and cubed
Instructions:
- In a large bowl, toss together the first six ingredients. In a jar with a tight-fitting lid, combine the salad dressing ingredients and shake well.
- Pour over salad and toss to coat.
- Layer a serving bowl with some salad leaves, and add in the tossed mixture. Cover and chill for 1 hour before serving.
