
Chunky Tomato Gazpacho
Chunky Tomato Gazpacho is a hor d'oeuvre that serves 6.

Ingredients:
- Sliced avocado
- 1 cup bread crumbs
- 4 stalks of diced celery
- 1 cucumber
- 2 cloves minced garlic
- 1 green pepper, chopped
- 1 tablespoon olive oil
- your favorite olives, chopped
- 1/2 onion
- salt and pepper to taste
- 3 tablespoons (30 -45ml) sherry wine vinegar
- 1 cup (240 ml) tomato sauce
- 8 ripe tomatoes (peeled, seeded and coarsely chopped)
Instructions:
- Put the tomatoes, green pepper and onion in a blender and puree. (BTW, you can easily peel tomatoes by submerging them in boiling water for a minute or two after which the skins should come off easily.)
- Add the rest of the ingredients to the tomato mixture and garnish with your favorite chopped olives.
