Red Quinoa and Roasted Cauliflower Salad

Ingredients:

  • 1 medium cauliflower
  • 1 cup red quinoa
  • 1/3 cup walnuts, chopped
  • 1/4 cup dried apricots
  • 1/3 cup feta cheese
  • 3 green onions, thinly sliced
  • 3 Tbsp. chopped parsley
  • Salt and Pepper to taste
  • 1 lemon
  • Olive oil

Instructions:

  1. Cook the quinoa according to package directions.
  2. Preheat the oven to 400 F
  3. Cut head of cauliflower into florets. Toss with olive oil, salt and pepper and place on a baking sheet. Roast cauliflower for 20 minutes or until tender.
  4. Meanwhile, crumble the cheese and chop the rest of the ingredients.
  5. Mix them all together, sprinkle with some extra virgin olive oil and juice from 1/2 a lemon season to taste.
  6. Serve warm or cold.
